dad joke piñata cookies
Piñata cookies are so much fun. I’m not sure if that’s what the official name for these cookies are but that is what I call them. Full disclosure, these cookies are enormous. They would be really fun to make for a gender reveal, as valentines or fathers day!
These cookies take kind of a long time to make and if using my cookie recipe you may only get 7-8 total piñata cookies depending on the size of your cookies cutters.
Supplies
2 Cookie cutters in the same shape but different sizes. I used a large (4”) and standard (3.5”) hexagon from Holly Fox Designs. You can buy them here.

Instructions
Make sugar cookie dough.
The hardest part of the cutting out the cookies is cutting out the narrow middle layer without effecting the shape. I like to press the larger shape in the very chilled dough first and then line up the smaller shape inside and press.
Then I lift out both cookie cutters and both shapes.
Place the cookie cutters with dough still inside on a baking sheet.
Carefully remove the smaller cookie cutter.
Gently remove the large cookie cutter gently pressing the dough down so it doesn’t lift with the cookie cutter.
Cut out solid cookies with the larger size cookie cutter. You will need twice as many solid cookies as the outline shape.

Make some royal icing, recipe here. Mix up the colors you want. I used white and olive green. I started with a line consistency and filled tipless piping bags.
Cover up the remaining royal icing and save for later.
Pipe the outline of the cookies. I did half in green and half in white with a white line dividing the cookies in half.
Using the same colors you made for the lines make flood consistency icing and fill tipless piping bags.
Fill half the cookie with flood icing.
Use a toothpick to spread the icing evenly. Shake and tap the cookie gently to even out the icing.
While the first side of icing is still wet fill in the other side with another color.
Spread out the icing evenly with a toothpick. Shake and tap the cookie gently to even out the icing until it’s smooth.
Let the cookie dry completely. I let these dry overnight. Using an edible pen write out your message.
Pipe over the letter outline with line consistency icing.
Fill in the lines with more icing.
You could skip the icing on the letters and just use the edible pen.
You only need to ice half of your solid shapes. Take an un-iced shape.
Pipe some royal icing on the bottom of one of the outline cookies. The outlines may have morphed a little in baking.
Attach the outline to the un-iced shape.
Fill in the cookie with a layer of sprinkles.
Add your message on top of the sprinkles. For these cookies I was making dad jokes so I put the punchline inside the cookies.
Top the message with more sprinkles. I like to cover all sides of the message with sprinkles because it helps the paper from getting grease marks from the cookie.
Pipe royal icing on top of the outline.
Top with iced shapes.
Let icing dry completely and you’re ready to crack it open!
